Redemption BBQ and Market, 3420 Lauderdale Drive – The following violations were reported during a routine inspection: temperature of shredded brisket is elevated; plastic bulk bin on dry ingredients storage shelf is unlabeled; gasket liners are torn on both doors of the second prep unit on the line; racks in three-door reach-in refrigerator are peeling and the vents are covered in dust.

Hibachi House, 3456 Lauderdale Drive – The following violation was reported during a follow-up inspection: gasket liners are still torn on right-side and middle doors of the three-door reach-in unit.

Yen Ching, 9031-5 West Broad Street – The following violations were reported during a routine inspection: employee is eating at the cook line; employee touhed cell phone with gloved hands and then handled noodles without washing hands; employee washed hands without soap at the prep sink; there was no hot water at the hand sink initially because it had been turned off; raw beef is stored above barbecue pork and raw chicken is stored next to barbecue pork in walk-in cooler; fried chicken in big metal strainer at cook line isn’t at the proper temperature (person in charge states it is held there during lunch); temperatures of sprouts and noodles across storage shelves in cooler are elevated; cold medicine and hydrogen peroxide are stored next to food in dry storage area; employees are wearing braclets and watches while handling food; walk in cooler fan guards, sides of large wok stove and floor under wok stoves are dirty; observed low grouting at cook line; hood filter panels are loose; there is a loose floor panel in front of three-compartment sink.

Firehouse Subs, 8191-A Brook Road – The following violations were reported during a routine inspection: employee entered restaurant from outside and put on gloves to prepare food without washing hands first; temperature of meatballs in reach-in refrigerator is elevated; temperature of ham in make table is elevated; observed multiple small flies near floor drain under three-compartment sink; red cutting boards are heavily scratched; wet mop isn’t hung or inverted to air dry.

Hong Kong Kitchen, 2907 Williamsburg Road – The following violations were reported during a routine inspection: observed egg noodles and cut lettuce improperly cold holding in prep unit; fried chicken is being held on time without a written policy in place; there are holes and gaps in back screen door; bucket to hold wiping cloths has 0 ppm chlorine sanitizer; knives are stored in crevices of prep tables; rice scoop is stored in ambient temperature water; food found stored in non-food grade, plastic to-go bags; observed dried food debris on floors; observed grease on floors and walls behind stationary equipment.

MAY 15

Subway, 4386 South Laburnum Avenue – No violations reported during a follow-up inspection.

Cava Grill Short Pump, 11780 West Broad Street – The following violations were reported during a routine inspection: no hand sink is available in the back end of the building where food preparation is occurring; gasket liner is torn on raw meat lowboy on the cook line; dry ingredient shelf above the veggie wash is covered in a layer of debris; dumpster area is dirty and surrounded by loose trash and debris; food preparation is taking place in the back end of the building where there are no finished flooring, walls or ceiling panels.

Apollos Flame Baked Pizza & Grill, 9410-B West Broad Street – The following violations were reported during a routine inspection: didn’t observe a food protection manager certificate; raw steak is stored over ham in grill drawers; temperature of nacho cheese in small warmer is too low; grill cleaner is in an unlabeled spray bottle; Pepsi cooler gasket is torn and shelves are rusted; observed food debris buildup on shelves and fan guard in walk-in cooler.

Fratellis Pizzeria, 9027 Quioccasin Road – The following violations were reported during a routine inspection: wires are separating from bases of deep fryer baskets; observed grease residue on painted walls underneath hot line cooking equipment; sanitizer test strips are expired; wrap on new equipment (reach-in cooler and prep table) needs to be removed.

MAY 19

Poke Sushi Bowl, 11628 West Broad Street – The following violations were reported during a routine inspection: temperature of cooked shrimp in standing reach-in unit is elevated because of improper cooling methods (cooked previous day, covered with cling wrap and stored in reach-in unit); temperature of boba sitting out on counter is elevated (boba doesn’t have a written time policy in place); no date mark found on tempura in two-door reach-in refrigeration unit; menu doesn’t contain a disclosure for raw tuna contained in spicy California roll; raw fish being thawed in two-door refrigeration unit is still in its vacuum sealed packaging; racks in two-door reach-in refrigeration unit in back of facility are beginning to peel; mop isn’t hung or inverted to air dry.

Canastas Chicken, 11424 West Broad Street – The following violations were reported during a routine inspection: open can drink found at the end of the cook line; raw chicken is stored over ready-to-eat broccoli in second lowboy on prep line; cooked potatoes being stored on the countertop next to deep fryer are not at the proper temperature; several utensils and scoops are stored in a deep, plastic container filled with standing water; gasket liners are torn on right-side door of the first prep unit on the line and on all three doors of the second prep unit on the line; wire racks in walk-in cooler are covered in rust; metal pieces are broken off one of the fryer baskets; cardboard is lining shelves under prep tables and shelves throughout the kitchen; drying rack across from three-compartment sink is covered in a thick layer of food debris; there is a y-valve connected to mop sink faucet without the appropriate backflow prevention device installed; dumpster area is dirty and surrounded by loose trash and debris; ceiling vents over ware washing area and over the expo line are surrounded by a thin layer of dust.

Arby’s—Tuckernuck Square, 9080 West Broad Street – The following violations were reported during a routine inspection: an employee picked trash off the floor and continued to handle food without washing hands; salads prepped at 9 a.m. in salad cooler on the line have elevated temperatures; thermometer inside salad cooler is reading 52 degrees; there are torn gaskets on salad cooler and walk-in freezer; floor tiles are cracked and loose in walk-in units; observed low grout at lowboy warmer units; observed heavy crumb buildup on floor at lowboy warmer units; there is buildup on walk-in cooler fan guards.

Hungry Eyes Jamaican Restaurant & Bar, 201 Towne Center West Boulevard – No violations reported during a follow-up inspection.

KFC, 9000 West Broad Street – The following violations were reported during a routine inspection: employee handled raw chicken with gloved hands and then handled ready-to-eat chicken without washing hands and changing gloves first; temperature of potato rounds in the warmer is too low because the warmer was partially open; quat sanitizer concentration level in three-compartment sink is too high; an employee with long facial hair isn’t wearing a beard guard; shelving racks in walk-in cooler have chipping paint and rust; light is flickering near exit door of walk-in cooler; facility doesn’t have quat sanitizer test strips; observed dust buildup on monitor on prep line and fans in walk-in coolers; there is a y-connector on mop sink without the proper backflow prevention device installed; there are cracked and missing floor tiles near breading station, three-compartment sink and exit door; observed grease and food debris buildup on floor behind cook line equipment.

Zaxby’s, 4798 South Laburnum Avenue – The following violations were reported during a routine inspection: dirty dishes are stored as “clean” in the kitchen; food staff in kitchen are not wearing hair restraints; ice scoop handle is stored in ice machine with handle touching the ice; clean dishes are stacked while still wet; deep fryer baskets are in disrepair; two lights are out in the hood system; there are dried food stains/debris on exteriors of reach-in coolers, with pooling water and food debris in the interiors; observed grease residue and dried food debris on sides of hot line equipment; top of expo line has dust and food debris on it; there are dried food stains on shelves; walk-in cooler fan guards are dusty; walk-in cooler storage racks are moldy; there are leaks in pipes underneath three-compartment sink; there is a y-connector on mop sink without the proper backflow prevention device installed; women’s restroom doesn’t have a covered trash can; unnecessary items are stored in the dumpster area; outdoor dumpster doors were left open; ceiling tile near ventilation in kitchen and ceiling ventilation grate/grill are dusty; walls behind hot line are greasy; there are dried food stains on walls throughout the kitchen; there are staff food items stored amongst food in reach-in cooler.
